Put the tofu pieces in a bowl and dust them with rice powder, pepper and salt. Mix till all pieces are coated well. Now, heat a pan, and add some sesame oil. Shallow fry the tofu pieces until they are golden brown. Remove the pieces on a tray lined with kitchen roll.
Now, in the same pan, take some more sesame oil and add the chopped spring onions. Then, add the ginger paste, chopped garlic and red chili. Cook it for a few minutes. Next, add all the veggies and stir fry them.
For the dressing, take a bowl and add some unsalted, unsweetened peanut butter, ginger paste, maple syrup, soya sauce and whisk it all together. Add the coconut milk and mix well. Add the rice vinegar, lemon juice, chili, pepper, salt, and a pinch of cayenne pepper. Add chopped coriander.
Assemble the salad with roughly chopped Romaine lettuce leaves. Next, add the stir fried veggies, tofu and mix well. Drizzle your salad dressing and some toasted sesame seeds.
