Happy Monday! How are you on this May morning? I think I could have slept solidly for another hour or two, but I just can’t give up my quiet mornings. Did you have a nice weekend? Ours was very soccer heavy, which was fun. I love watching my kids do their things, though I was bummed to have to miss so many of Hailey’s games. H and K both had end of season tournaments, but in different locations in times that overlapped and since David helps coach H, we had to stick to our split. A successful weekend though, with H getting runner up in her tournament and K getting first place in hers. This season of soccer has officially come to a close!

That means this week is our first week without evening soccer two nights a week and without co-op. No fear, swim team is here to help fill the gap 😉

Homeschooling wise, I feel we are beginning our limp to the end of the year. We are spending our days reviewing, doing Synthesis tutor, and practicing piano. We will go until the end of May, then go “school light” for June, and maybe for July, too, with just math and spelling. This used to worry me some, but since I’ve embraced homeschooling with the seasons, I love it. It gives us more time for read aloud, hobby chasing, and enjoying the long days, and when we are all sick of the heat and ready for structure in early August, we’ll hop back into more structured learning!

Anyway, that was a lot of chatting for a weekly meal plan post, but these make a nice spot to check in on life while simultaneously sharing our meals. I hope you had a rejuvenating weekend and a smooth start to the new week!

Monday

Slow cooker chicken- I kept it easy- 4 large chicken breasts, 1 can of Rotel, about a cup of salsa, and some taco seasoning. I put it on slow cook for about 5 hours, then shredded in the mixer. We put it on tortillas with refried black beans, sour cream, avocado, pico, and cilantro.

Tuesday

The slow cooker to the rescue again! I salt and peppered a bone in pork butt and put it in the slow cooker for 11 hours. It shredded beautifully and everyone added their own sauce of choice. I made a quick slaw with green cabbage, purple cabbage, carrots, mayo, vinegar, celery seeds, salt, and sugar. Pickles on the side!

Wednesday

Slow cooker again 🙂 I am writing up this recipe to share because I really love it. It’s a set it and forget it recipe that has a deeper flavor than you’d expect from a simple throw together recipe. Over rice because I love my rice cooker.

Thursday

Shepherd’s pie, a favorite recipe I’ve made multiple time, came in clutch for Hailey’s sore teeth from getting her braces tightened. I doubled the recipe and brought some to my neighbor, too. It’s a great one to bring to a friend because it is hearty, comforting, and can go right into the freezer if they prefer to save it for a later date.

Friday

The plan was to go to Mexican for Cinco de Mayo with friends after Kaitlyn’s soccer game, but our go-to spot was slammed so we pivoted and headed to King Canary to have a beer and take advantage of their taco food truck.

Saturday

Saturday was filled with four soccer games between the girls, so we all were ready to relax with pizza and a movie when we got home. Homemade bread machine dough with pizza sauce, pesto, mozzarella, bell peppers, onions, mushrooms, and fresh herbs. We watched the new Top Gun for the first time and though Kaitlyn kept saying her heart was pounding, it was a hit!

Sunday

Ended the week with a classic, mom’s homemade spaghetti sauce over spaghetti with a salad made of mixed green, grape tomatoes, cucumbers, purple cabbage, and carrots.

Breakfasts and Lunches

A lot of snacky lunches with veggies, ranch, and ham and cheese roll ups. I made a few breakfast hashes with frozen potatoes and kale with eggs, then it was mostly egg on a bagel with fruit or smoothies.
