My family loves bananas probably more than any other fruit, but sometimes they get ripe before they finish them off. As a result, I make a lot of different recipes using bananas to salvage instead of waste. Here is the best recipe for delectable and healthy banana oatmeal muffins that are tender, moist, cake-like and delicious enough to be cupcakes. Why This Is the Best Banana Muffin Recipe

The kicker is that these delicious banana muffins are also healthy muffins. They are full of protein from oatmeal and eggs. You can also add about one-half cup of chopped walnuts or pecans to boost that protein even further. Best Banana Oatmeal Muffins

3/4 cup of sugar
3 medium ripe bananas, mashed
2 large eggs
½ cups canola oil
1 ½ cups of flour
1 teaspoon of baking powder, leveled
1 teaspoon of baking soda, leveled
1 cup of quick oats
1 teaspoon of vanilla

  1. In a large mixing bowl, mash the bananas and then beat together the sugar, eggs, oil, and vanilla with your electric mixer.
  2. Sift together the flour, baking powder and baking soda.
  3. Slowly add it and the quick oats to the creamed ingredients to combine until all the ingredients are incorporated.
  4. Line or grease your muffin tins. Fill each muffin cup about 2/3 full for 12 muffins.
  5. Bake in a 375-oven for about 18-20 minutes, depending on how your oven is regulated.
  6. Test with a toothpick, slender knife or cake tester to see if anything sticks for determining doneness.
