My recipe for mozzarella biscuits pairs perfectly with a fresh salad or a hearty soup that is so satisfying and delicious to add to any menu. These biscuits are tender due to the buttermilk and butter with just enough cheese to add extra nutrition along with a tantalizing touch of garlic flavor.

Unless you’re making drop biscuits, most other varieties are rolled and cut with a biscuit cutter or a glass. However, these biscuits also can be made by rolling the dough into small or medium balls for baking to speed things up to get your lunch or dinner together when you need to save time. Although they may not be as beautiful as regular rolled biscuits, they taste just as incredibly delicious and flaky as their counterparts.

Mozzarella Biscuits

2 cups of flour
1 tablespoon of baking powder, leveled
1 teaspoon of salt
1/4 teaspoon of baking soda, leveled
1/4 cup plus 2 tablespoons cold butter, cut into pieces
3/4 cup of buttermilk or sour milk
1 tablespoon of sugar
½ teaspoons of garlic powder
1 cup of grated mozzarella cheese

Sift together the flour, baking powder, baking soda, salt, sugar, and garlic powder into your mixing bowl.

Cut in the butter to the dry ingredients with a pastry blender or using your hands until the mixture resembled coarse crumbs.

Stir in the buttermilk last.

You can roll dough to ½”- thickness on a lightly floured surface and then cut with a biscuit cutter or a glass for the best looking biscuits or you can take a shortcut and just roll them into small balls using your hands.

Place on a lightly greased baking sheet and bake at 375-degrees for about 10-12 minutes, depending on how your oven is regulated.
